🛒 Ingredients for 750ml jar
300 g radish, trimmed
3 garlic cloves, peeled & crushed
10 fresh mint leaves
Brine: 12 g salt (≈ 1 level tbsp) dissolved in 500 ml boiled & cooled water
👣 Step 1 — Prep & Pack
Slightly crush the radishes.
Place garlic and mint at the bottom of the jar (helps prevent floating) and pack in the radishes tightly.
Pour in the brine until everything is fully submerged.
Add a weight on top, top up with brine to nearly the top, and close the lid loosely.
👣 Step 3 — Ferment
Keep the jar on your countertop, away from sunlight and heat. Ferment for 2–3 days, depending on room temperature.
Taste on day 2:
If ready → move to fridge
If not → leave one more day
